A perfumer does not have a special nose. What makes them different is practice. They smell materials constantly, write about them, compare them, classify them, and discuss them with other perfumers. 

Over time, this builds a strong scent memory and a precise vocabulary. Perfumery is less about natural talent and more about training the mind to notice, remember, and describe scent.
